What is a juice centrifugal extractor, and how does it work?
With this type of device – as the name suggests – the centrifugal force acts.
The fruit and vegetables used are shredded with a friction disc.
At the same time, the container rotates around itself, whereby speeds of up to 15,000 revolutions/minute can be achieved.
The resulting centrifugal force ensures that the juice is “thrown” out of the fruit and vegetable pieces. This flows through a spout while the pomace is passed into another container.
High rotational speeds ensure that the fruits and vegetables are quickly juiced, and larger quantities can be processed faster.
This is why centrifugal juice extractors are used particularly frequently in gastronomy.
However, high revolutions often cause heat development.
This can deprive the juice of valuable nutrients, such as vitamins and enzymes. Besides, oxygen gets into the juice, which also damages its quality – both in terms of ingredients, as well as in terms of taste and shelf life.
The high wattage and the often large hopper allow you to the juicer with a centrifugal juice extractor, even hard fruits, and vegetables such as beetroot, apples, or celery without much preparation or overloading of the device.
What is a juicer, and how does it work?
In a juicer, also referred to as a slow juicer or cold juicer, the fruit and vegetables are obtained mechanically by crushing the crop by a powerful wave.
This is done, for example, by a rotating cutter, which processes the ingredients into porridge and then squeezes through a sieve.
Other juice presses squeeze the juice out of the fruit and vegetables using slowly rotating screw presses.
Other devices are equipped with counter-rotating pressure rollers that crush the pressed material. This also produces pomace, which is drier than a centrifuge.
The number of revolutions of the excellent juicer are usually between 40 and 80 revolutions per minute, whereby we speak up to a maximum of 200 revolutions per minute of a slow juicer.
There is hardly any heat and therefore oxidation, so that valuable vitamins and nutrients are better preserved.

Why is oxidation harmful?
We expect you to prepare fresh juice, not only for its delicious taste. Surely you expect a positive impact on health and well-being.
This, of course, is the higher, the more nutrients are contained in the juice. Therefore, we would like to take a closer look at the subject of “oxidation.”
As mentioned above, when juicing with a juice extractor, much oxygen is supplied to the crop.
The result: it oxidizes. It’s like an apple when you cut it up.
He quickly turns brown at the cut surfaces.By definition, oxidation is a chemical reaction in which elements absorb oxygen or combine with oxygen.
Energy is released during this process. This arises because the oxidizing substance gives off electrons.
As a result, the existing substances are changed or even destroyed – especially valuable vitamins and enzymes.
